Goat Cheese CrostiniThis is a great recipe to serve as an appetizer or a quick canapé. It is especially easy and quick in the event of an impromptu or unexpected holiday gathering. A crostini is a little toast topped with something tasty. There are many variations, but this one is simple and delicious. To begin preheat your oven to 350° and grab your favorite bread knife. Slice a baquette thinly (about 1/2″) on the bias and lay the slices on a baking sheet. Brush each slice with a light coating of a fragrant extra virgin olive oil. Pop the tray into the oven until the tops are lightly browned (about 5 minutes) and then flip the slices and put back into the oven for 2-3 minutes. Remove from the oven and let cool enough to handle. Crush a clove of garlic and lightly rub the oiled side of each toast. In a bowl add about 4 oz of goat cheese, a few grinds of pepper, a pinch of salt, a light dash of balsamic vinegar, and a drizzle of olive oil. Chiffonade 4-6 fresh basil leaves, add to the bowl and mix just until combined. Spoon a little cheese mixture on each piece of garlic toast. Thinly slice some cherry tomatoes and put a slice on top of each crostini. That’s it. These taste fantastic and your guests will be very impresed. It is very easy to adapt this to match wine or your guests’ tastes. Use a little oregano, add some feta cheese along with the goat cheese. mix in some diced pepperoncini and top with an olive slice to make it more Mediterranean. Another variation mix in a little lemon zest, a squeeze of lemon juice and a squirt of honey and then top with a little apricot preserves. The possibilities are endless. With the holiday season bearing down on us like the FBI on a Chicago politician it doesn’t hurt to have an arsenal of simple, but impressive, finger food ideas at hand. When I was growing up travel was so much more of an adventure. These days travel around America, especially by car, means driving past the same box stores, eating at the same chain restaurants, and hearing homogenized radio stations.
